vegan mofo: ambercup mash

i was given an ambercup squash and had no idea what to do with it.

status: epic fail!

why i'm including it: it seems every vegan and their mother loves some sort of squash mash or hash. i guess it's just not for me. it was too sweet.

would i make it again: nope, i'm sticking with the spicy chili squash soup (which i've now also made with butternut and love)!

There is something called an AMBERcup squash, are you kidding? Ok, I've got to find one of those things.

I am a huge squash guy so I might try this despite your warnings! Haha

Never heard of ambercup squash before but I find a lot of squashes too sweet for me - it's a fine line between getting the spices and seasonings right and very wrong - I usually get it wrong.

I thought I had exhausted the squash options but looks like this is a new variety. I'm not a huge squash fan either, so thanks for the warning.

I've never heard of this one - are you making it up?
I'm so kidding. I know squash sometimes surprises with its sweetness.
