- 1/2 cup cooked lentils
- 1/2 cup cooked yellow split peas
- 1/2 cup cooked green peas
- 1 can kidney beans, drained
- 2/3 cups short grain brown rice
- 2 pieces of whole wheat toast
- 1/4 cup ground flax seed
- 1/4 cup nutritional yeast
- 1/2 tablespoon liquid smoke
- 1/2 tablespoon vegan worcestershire sauce
- 1/2 tablespoon soy sauce
- 1 ½ tablespoon tomato paste
- 1 jalapeno, minced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 3/4 teaspoon ground sage
- 1/2 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon black pepper
- 1/4 cup hickory bbq sauce
preheat the oven to 375°f. if you like a crispy crust, divide the mixture into to loaf pans. cook both pans for approximately 30 minutes. the result will be less thick, but you'll have a nice proportion of crispy exterior and soft inside. i haven't tried cooking it all in one pan, but i imagine you'll have to extend the cooking time.
i like to serve mine with a trio of dipping condiments (see background of picture). i put one dollop of ketchup, one dollop of mustard, and one dollop of bbq sauce side by side. plus this gives it fancy-pants presentation.

Yum! I like Mock Meatloff and I never like the real thing. The mock ones have so much more flavor and just feel healthy! :)

I have a vegan baking question for you. I'm having pretty good success with my cookies in terms of flavor, but they are spreading and are kind of cakey. I'm looking to make something akin to Alternative Bakery's cookies (high, bumpy, moist yet substantial...). Any ideas? More flour? Wish you could be here, toiling away in the deliciousness with me! xoxo
I love making happy-loaves! I almost never follow a recipe (just using what's on hand) but the problem is I can never recreate what I made! I'll have to try yours when the temps drop again!

I'm diggin the mock meat loaf. You think it would be bad if I left out the liquid smoke? That stuff creeps me out for some reason (but maybe it's all in my head!) ;)
I've been on this big bean kick lately, and I think that's great as a pseudo meatloaf. The color is even spot on :) You're not missing much in the way of grease anyways.

Haha, I totally agree about Whole Foods being kinda pricey. Trader Joe's is much more reasonable, but they don't have all of the goodies that Whole Foods has! :)
Oh, and I can't wait to try some more V'Con recipes! I also want to try those SmartDogs, but maybe not in "Diablo" style. I may die from a heat stroke. Haha :P
