- 4 whole wheat tortillas
- 1 can vegetarian/vegan refried beans
- 3 cans tomato sauce (8 oz. each)
- 1 block vegan cheddar (like vegan gourmet)
- most of a fajita/burrito seasoning packet**
- handful of black olives, sliced (optional)
- 1/3 cup nutritional yeast
- 1/3 cup whole wheat flour
- 1 cup water
- 1 tablespoon minced garlic
- 1 teaspoon onion powder
- 1/2 teaspoon salt/pepper mix
- 2 teaspoons vegan butter ( i use smart balance)
- 1 tablespoon fajita/burrito seasoning mix**
in a 1½ quart round baking dish, lay down one tortilla and spread 2 spoonfuls of refried beans on top. then layer about 1/4 of the tomato sauce and 1/4 of the cheese sauce. lay down another tortilla and keep layering in this manner until you reach the top. finish with a layer of tomato sauce, and sprinkle shredded vegan cheddar on top. i like mine topped with sliced black olives.
bake at 350°f for about 20 minutes, or until cheese and sauce is bubbly. allow to cool for 5-10 minutes before serving.

if you could make these for me now, that would be great! i found an enchilada casserole recipe on peta's website that i was going to try, but have been too lazy.. now i'm sick and don't think i should be preparing food for others. so if you would bring these over that would be great! p.s. this looks very good!

i ALWAYS make my enchiladas like a casserole like that...so much easier to eat and dish up! plus i don't have to worry about rolling!
i love enchilada casserole. love it. someone made us one when we first had our son and we loved it so much i kept making it.
It's when I see recipes like this that I curse the vegan cheese gods for not providing my "petit village" with vegan fromage. Oh how I would love to attack this with a fork!

these sound so great! it's like an enchilada lasagna of sorts :) also, LOVE your sushi from the previous post. i would have never thought to put peanuts in sushi, but now that i think about it, i bet it's totally rad!

Wow.. Enchiladas are the one i was longing to try (never made them at home).. This is a nice variation to the traditional enchilada recipe.. Thanks for sharing! Looks fabulous! Make me crave for some..

The one food I've missed since I became vegan late last year is cheese. I have everything to make this recipe except the cheese!! I don't know if my state even has a store that sells vegan cheese. But I'm going to try to find one right now!!
