for the chop:
- 1 1/2 cups wheat gluten
- 1/2 cup + 2 tablespoons veggie broth
- 1/2 teaspoon celery salt
- 1/8 cup low sodium soy
- 1/8 cup cold water
- 1 teaspoon cajun/creole seasoning
- 1 tablespoon lipton savory herb garlic soup powder
- 1/2 teaspoon liquid smoke
- 1/2 cup water
- 1/3 cup bbq sauce
- 3/4 tablespoon stoneground mustard
- 1 teaspoon all spice
- 1 cup breadcrumbs (optional)
mix up marinade and coat each chop well. put the rest of the marinade in an 8x11 glass baking dish and let the cutlets marinade for several hours (or overnight).
after marinating, pour off and reserve the liquid. bake chops at 375°f for 40 minutes, flipping half way through. to encrust, pull chops out of oven for several minutes. using tongs, dip each into the reserved marinade, and then into breadcrumbs. put back into dish, and continue cooking at 375°f for about 10 minutes. serve on a bed of miso mustard cabbage slaw.

I was never a pork chop fan either. My husband loves them. Now that he is a vegetarian I will have to try these out for him!
That's pretty amazing that you can make vegan pork chops! I have to try it!
Hey Ms. Vegan Genius! What will you think of next?
You are absolutely amazing! These look wonderful!
yum-o! i am becoming more and more obsessed with homemade faux meat. will definitely give this a spin!
Wow! That sounds delicious. I'm a huge fan of the faux meat/gluten-heavy stuff. I bet this tastes great with the slaw.
hehe these look awesome.
these look amazing! i never liked pork chops, either, but seitan style pork cannot miss, i'm sure. yumm!
these sound fantastical & look absolutely awesome! nice, miss. v! wow!
Yay! I always love new seitan recipes to try and I don't have a pork one yet!
Looks delicious!
What a great idea. I know I'm going to have to try this - it doesn't seem to labour-intensive, either, just a little planning.
the chops and the slaw look great. i bet it would be even better with some roasted applesauce. i'll have to try this the next time i get a craving for pork.
I have to try this. I I too love trying to replicate as many things as possible. It's so much fun! Plus it;s a great excuse to experiment!
The lipton soup powder has chicken fat ans msg.
My son cried last night because he wanted pork chops. We have been vegan for a few months now, and he hates everything. I was trying to make me PROMISE I would buy some for tonights dinner. Thank you for this. I pray he likes it!
Well, I tried this recipe out and followed the instructions exactly as far as I know. However, the result was very disappointing. The seitan puffed up and burned where it touched the pan. In the end, sadly to say, it looked a little more like a charred bread stick rather than a pork chop. Any guess as to why the seitan puffs up?
I am going to make these tonight. May not make a BBQ version. Make a different marinade, and perhaps fry them up. I will do the BBQ version for labor day
