barbecue veggie kabobs

i live in the midwest, and have grown up eating grilled barbecue food for most of my life. i love portabello mushrooms, stuffed green peppers, homemade brats, and everything in between. i really love veggie kabobs because you can use a variety of veggies to mix it up each time. this isn't really a 'recipe', per se, but an idea of how us veggie folks grill non-meat style. trust me, it is so filling! pardon my non-plated picture, but i was just too hungry!


veggie varieties:
  • mushrooms
  • tomatoes
  • potatoes
  • bell peppers, any color
  • zucchini
  • yellow squash
  • cactus
  • corn cob sections
cut all your favourite produce so it is close to bite-sized. find some wooden or metal skewers, and mix and match all your veggies. i use a basting brush, and coat everything heavily in bbq sauce. if you have too many veggies, toss the remainders in a grill basket with seasoning salt. make sure to put things like corn and potato slices on their own skewer as they need longer amounts of time to grill. after starting those kabobs, add the skewers with more tender veggies - they finish up in about 7-10 minutes on grill-medium heat.

when everything is grilled, pull all veggies off and eat up. optionally, serve on a bed of rice.

on a side note, i kept wanting to spell 'kebab' - but i guess that is traditionally more meat oriented. if i would google just 'kabob', it would ask me if wanted to spell 'kebab' instead. but i would google 'veggie kebab', it would ask me to spell 'veggie kabob'. interesting....

Ohh, grilled veggies! These look awesome. I have to admit the first thing I noticed were those skewers! I've never seen any like them - they look good and sturdy. Neat!

I could coat BBQ sauce in BBQ sauce, I love it so much :) Nice job on the skewers, I actually prefer to have my veggies grilled vs. any other cooking method.

And spell kebab however you'd like... it sounds more midwest that way to me :)

those skewers cam in a bbq kit from bit lots! they came with tongs and other grilling accessories. they are seriously like 6 or 7 years old and have seen their fair share of grill outs! they hold up so much better than the little wooden ones...

I've always wondered what the difference between a kebab and a kebob was! I assumed it was a regional language thing, but maybe not. We've always called them kebabs (my family being the we).

Mmmm I love bbq's! Looking forward to the summer weather so we can have one again! My favourite thing ever is a bbq'd banana (I know that sounds weird, but if you throw a whole nana on the bbq, skin and all it gets all melty and yummmy inside!)

Yum, your skewers look fantastic! I'm grilling some Indian spiced kebobs tonight.

When I want to put potatoes on the skewers, I steam them ahead of time, then they can go on with all the other veggies.
