untraditional gazpacho

traditionally, gazpacho is served cold, but i like mine at room temperature. traditionally, it's a refreshing summer dish, but i like it in the winter too as a counter to all the heavy meals. traditionally, bread crumbs are almost always in the recipe, but i omitted them because really, they just seemed unnecessary. no offense to other gazpacho chefs - i'm sure there are plenty of great recipes with breadcrumbs, but this is untraditional gazpacho, after all.

  • 2 14oz. cans fire roasted tomatoes (drained)
  • 1 jar of roasted red peppers (drained)
  • 1/2 can whole kernel corn
  • 1/2 cucumber, peeled
  • 1/2 green bell pepper
  • 1/4 cup cilantro
  • 2-3 garlic cloves, minced
  • 3 tablespoons onion powder
  • 1 ½ tablespoons ground black pepper
  • 3 tablespoons red wine vinegar
  • hot sauce to liking
just throw everything in a food processor and pulse until you have a well blended chunky gazpacho. you may need more vinegar or hot sauce to help liquefy everything.

makes several bowls.

gazpacho usually freaks me out, but yours looks really darn good! i think i have to agree with you - it sounds more appealing to me at room temp as opposed to cold!

You know, I've never tried Gazpacho, something about cold tomato soup seems kind of scary, but this sounds wonderful and would be perfect for all the hot and horrible weather we're getting here at the moment!

gazpacho is something I've never tried either, I can't say I've ever fancied cold tomato soup! but that actually looks really good.

Yum Yum Yum!! Usually I am not a fan (I can't eat cold soup, it's just not in me), but yours looks really yummy! I'll have to give it a try!

this sounds like an awesome version of gazpacho, i'll have to try it soon. every time i hear the word gazpacho, i just can't help but think of the simpson's episode where lisa becomes a vegetarian. that's one of my favorite episodes.

that pasta dish looks awesome as well.

oooooh this sounds so good! i've never made gazpacho, but i'm willing to try it out! i like the idea of it not being cold, but room temp (especially in the winter). thanks for the recipe, my dear!

your gazpacho looks amazing!! i remember the only time i tried it was at a cooking school that i was touring. the head chef had samples of it and i wanted to gag. it was SOOO spicy that i spit it out right away.

I loved this gazpacho! The name of this salad(?) is totally unfamiliar to me, but we have a very similar one in Turkish cuisinie, definitely without bradcrumble. What about adding very little olive oil and sumac in it?
